Empellón is a Mexican-inspired restaurant group by Chef Alex Stupak with three downtown locations in New York City. Tortillas are created in-house by way of nixtamalization–Mexico’s most important cooking technique—which happens at Empellón Al Pastor every morning. In this process, field corn is boiled and ground into aromatic masa for our tortillas every day.
